This vineyard\u003c\/p\u003e\u003cp\u003ehas an altitude of 35 meters high, with a\u003c\/p\u003e\u003cp\u003esoil of granitic origin but also with some\u003c\/p\u003e\u003cp\u003eschist. With this vineyard we are able to\u003c\/p\u003e\u003cp\u003eobtain a quite unusual concentration and\u003c\/p\u003e\u003cp\u003eexpression of the variety, but still keeping\u003c\/p\u003e\u003cp\u003ethe freshness and pure nose of the variety.\u003c\/p\u003e\u003cp\u003eKey points\u003c\/p\u003e\u003cp\u003eHandpicked grapes, with a great selection\u003c\/p\u003e\u003cp\u003eat the vineyard, into small boxes and\u003c\/p\u003e\u003cp\u003ecarried to the winery in a short period of\u003c\/p\u003e\u003cp\u003etime. Very soft pressing of the whole destemmed\u003c\/p\u003e\u003cp\u003egrapes. Long cold clarification.\u003c\/p\u003e\u003cp\u003eFermentation in stainless steel. Ageing on\u003c\/p\u003e\u003cp\u003estainless steel for 9 months with regular\u003c\/p\u003e\u003cp\u003ebâtonnage.
