The Mediterranean climate provides a wide range of temperatures, and the transitional soils from clay to sand in this extreme Alentejo region allow, despite low productivity, conditions for ripening with great aromatic expression and retention of freshness. Hand-harvested from this plot, transported in small 12 kg boxes to the winery.\u003c\/p\u003e\u003cp\u003eIn the Winery:\u003c\/p\u003e\u003cp\u003eThe bunches selected in the vineyard are destemmed and transported by gravity to a small wine press where they ferment at a controlled temperature for 7 to 10 days.
