The Mediterranean climate provides a wide range of temperatures, and the transitional soils from clay to sand in this part of the Alentejo region allow, despite the low productivity, conditions for ripening with great aromatic expression and retention of freshness. Hand-harvested from this plot, transported in\u003c\/p\u003e\u003cp\u003esmall 12 kg boxes to the winery.\u003c\/p\u003e\u003cp\u003eIn the Cellar:\u003c\/p\u003e\u003cp\u003eBunches selected from the vineyard are destemmed and transported by gravity to a small wine press, where they ferment at a controlled temperature for 7 to 10 days.
