Horse-drawn plowing. Manual harvest into 18kg boxes. Direct whole bunch pressing, cold settling, spontaneous fermentation in barrels with bâttonage. Aged for 12 months in neutral barrels. Citrus yellow, fresh and mineral nose with some creamy notes. The attack is dense and rich with good acidity.
