Canada do Monte

Straw-yellow color, with aromas of iodine, salt, and linden blossom. On the palate, it has a dense, concentrated attack; the acidity cuts through in the middle and persists through the finish—salt, salt, salt, and iodine—it’s a “slap in the face” of the sea. A wine born of the sea, ready to pair with shellfish and seafood (red mullet, sea roe, sea urchins), yet with enough density and concentration to pair with white meats with a seared fat, such as a good suckling pig or even pork belly.
