Vinification

Hand-harvested, selecting only the best bunches. Fermented with native yeasts, in stainless steel tank. Aged for 7 months, 69% in used French oak barrels, 31% in stainless steel tank. The entire lot aged further 3 months in stainless steel tank before bottling. Unfined, unfiltered, and not stabilized. A slight deposit may naturally occur.
