Vinification

Hand-harvested, selecting only the best bunches. Only 6 days of skin contact with gentle pumpovers. Fermentation in bin and pressed before alcoholic fermentation ended. Aged in stainless steel tank for 8 months. Unfined, unfiltered, and not stabilized. A slight deposit may naturally occur.
