Espumante Vinha Formal 2019

To highlight the character of the terroir, this wine comes from a vineyard called Vinha Formal. Located on a small east-facing slope in Óis do Bairro, it lies at the heart of the Bairrada white wine region, as defined by António Augusto Aguiar in 1866 in his "Memoir on Winemaking Processes". In this vineyard, the first harvest for sparkling wine takes place between mid- and late August to obtain high acidity levels, ideal for sparkling wine; the second harvest is done two weeks later for the production of white wine.
