VINIFICATION
Hand-harvested in 20 kg boxes. Whole-bunch fermentation in stainless steel vats with temperature control at 26°C. Post-fermentation maceration. Malolactic fermentation in stainless steel tanks. Aged in French oak barrels for 24 months. Bottle aging for more than 6 months.
TASTING NOTES
Complex, fresh and deep nose. Notes of cherry, blueberries, black pepper, wet stone and dark chocolate. Palate of great texture and elegant structure always accompanied by freshness and tension. The aromatic notes of spices and fruit intensify during the long finish.
HOW TO SERVE
Room temperature of 17-18°C.
We always advise letting the wine sit before consumption. Ideally, this should be between 30 and 60 minutes. Once opened, it will be in optimal condition to be served for up to 5 days. Great versatility in terms of food pairings. It pairs perfectly with cheeses and cured meats, red meats and game, fattier fish, or even traditional convent sweets. A perfect wine for immediate consumption, but with a great capacity for evolution during bottle aging over more than 10 years.

Grand Noir, Castelão, Alicante Bouschet, Trincadeira, and a collection of dryland red grape varieties from Quinta da Cabaça.
