Temperature-controlled fermentation in stainless steel vats, followed by aging in FlexTank “Heavy.” Violet in color, it has fruity notes of blackberry, blueberry, and cherry, and may also have a hint of mint and thyme. Tannins are already rounded and balanced with good acidity.
