Once the ideal ripeness of the grapes has been determined, the grapes are mechanically harvested at night, at cool temperatures, to maintain the best organoleptic properties. In the winery, after partial destemming with slight crushing, the musts are meticulously fermented in stainless steel, extracting strong aromas of ripe grapes, wrapped in spices and a strong structure and balanced soft acidity, which we preserve in a light ageing in oak until bottling.
