Fermentation with wild yeast, with daily pigeage. Short post fermentation maceration of about 2-3 days.

Dark fruit aromas (black plum and redcurrant), spices (cloves), cocoa, tobacco, dried flowers and balsamic herbs. Fresh and silky mouth feel.
