Straw-yellow color, with aromas of iodine, salt, and linden blossom. On the palate, a dense, concentrated attack; the acidity cuts through in the middle and persists through the finish—salt, salt, salt, and iodine—it’s a “slap in the face” of the sea. A wine born of the sea, ready to pair with shellfish and seafood (red mullet, sea roe,sea urchins), yet with the density and concentration to stand up to fatty white meats, such as a good suckling pig or even pork belly.
